I had the pleasure of catering a wonderful outdoor wedding this past weekend. Northern Ontario has some of the most amazing scenery for a fall wedding. We’re surrounded with so many species of trees that the colours are boundless and plentiful. From oranges to brilliant reds to the more subdued yellows we are blessed to live in a country where nature lends to the perfect back drop for a wedding.

One of the inclusions to dinner was a mixture of Bacon Wrapped Dates & Figs. I chose to have a couple of different cheeses as well. Using both blue cheese and goat cheese gave the guests the opportunity to experience a sharp flavour combination and then a more mellow combination with the goat cheese.

89 guests consumed a few hundred of these little bite size bits of heaven in a matter of minutes. Isn’t everything truly better with bacon!

I’m not going to talk about nutrition with this recipe – lets face it, not everything we eat has to be 100% healthy. We are getting dairy, fruit and protein – that’s my justification.

Ingredients

12 dried figs

12 Madjool Dates

150 gr goat cheese

150 gr. blue cheese

1 tablespoons Olive oil

2 tablespoons balsamic vinegar

1 clove of garlic – crushed

Method

Marinate the figs in a mixture of balsamic vinegar, olive oil and garlic for 1 hour. Using a sharp knife – slice into the fig to open it up and place a piece of  cheese approximately 1/2 ” long in the center of the fig. Wrap and secure with a toothpick a 1/2 piece of partially cooked bacon. Place on a cookie sheet lined with parchment paper and bake at 350F for 10-12 minutes. Cool for 5 minutes before serving.

Please note, you can also use parmesan cheese in place of either cheese mentioned above. Be adventurous, add to the mix some Stilton or other strong cheeses.
